"Provare un po'di Tutto—try a little of everything."
Yaletown—(August 18, 2020) The brand new Tutto Restaurant & Bar quietly opened its doors in the historic location previously occupied by Harrison Galleries' former café and art dealer space at the base of the old Bulman Brothers Ltd. heritage brick building (originally constructed in 1910) on the bustling corner of Homer and Smithe.
signature negroni (with luxardo sour cherry gin, Campari, and Cocchi Vermouth di Torino)
funghi e tartufo pizza (with roasted wild mushrooms, truffles, and Taleggio cheese)
The new restaurant's goal is to profile tastes and "create dishes made by famous in the province of Italy"—all of Italy's regions as their name would suggest (Tutto means "everything" in Italian). However, there remains a global culinary influence to most every element of the endeavour.
parmesan-crusted halibut (with black risotto, rainbow chard, and lemon tarragon butter)
I'm not sure of Vancouver's current appetite for upscale Italian dining in a luxurious setting right now, but it's certainly worth a trip if you are so inclined judging by its early appeal. So far, its modern Italian experience is very promising.
