The Roof pop-up restaurant launch party atop the Fairmont Hotel Vancouver on February 3, 2014
The Fairmont Hotel Vancouver is putting the finishing touches on the limited return of their iconic restaurant and dining room on the fifteenth floor, "The Roof". To celebrate the announcement and the hotel's 75th anniversary, we toasted to a few of their signature Moscow Mule and Negroni cocktails.
The joint opens up on Valentine's Day going right until the fall with a full menu of drinks and fine cuisine.
All smiles with the lovely Kelly Jean Marion at the bar.
They also plan for tea service every day re-establishing The Roof as the hotel's temporary flagship dining location despite the "pop-up" status just as the lobby and lounge undergo big renovations.
They assure us the rooftop's floors and decor will be done in time for the grand opening.
Update: After several delays, The Roof is now officially open to the public.
